There is more than one way to mash a potato

Boil potatoes.  Force through a ricer or mash well.  Season to taste with salt and pepper.

Add 1/3 cup of hot milk or potato liquid and 3 tbsp butter, margarine, sour cream, or sour milk for every 5 potatoes.  Beat well until light and fluffy.

To keep hot, set over pan of hot water or pile lightly in casserole and place in slow oven 325F.
