Smoked Sausage and Lentils

Delicious meal . . . Hal did not like the lentils, which surprised me, until he explained it was too "hot" . . . I must have been a little carried away with the seasoning . . .  Had some leftover Tomatoes with Oregano to add to the plate and a few raw carrot slices . . . 1 clove garlic, finely chopped 1/4 onion, finely chopped 1/2 carrot, finely chopped 1/2 stalk celery, finely chopped 1/4 dried chili peppers, minced 1 tbsp olive oil 1 cup green-brown lentils (dried) 2/3 cup chicken broth ** 1 tbsp tomato paste salt and pepper to taste 2 smoked sausages 1 tbsp Italian parsley, fresh, finely chopped ** I didn't think there was enough broth in the pot so I added a little extra ** It is not necessary to soak the lentils in advance. Baked Chicken Sausage with Vegetables

Quantity : 2 servings Preparation : 10 min Cooking : 35 min 410 calories/serving Ingredients 6 small potatoes, whole or halved 280 g 1 red onions, cut into 2 cm pieces 150 g 1 yellow or red sweet peppers, seeded, then cut into 2 cm squares 200 g 3 chicken sausages, cut into 2 cm pieces 220 g 2 tsp olive oil 10 mL 1 pinch salt [optional] 0.2 g ground pepper to taste [optional] Method Preheat the oven to 215°C/425°F. Generously oil an oven-proof dish. Prepare the vegetables and cut them into uniform pieces. Put the pieces in the dish then coat them thoroughly with the oil. Add the sausage and season with salt and pepper to taste. Roast in the middle of the oven until the potatoes are fork-tender and golden-coloured, about 30-35 min. Sausage Gravy and Biscuit Skillet

This recipe takes Biscuits and Gravy to a whole new decadent level . . . SERVES 6 | ACTIVE TIME 20 Min | TOTAL TIME 30 Min Sausage Gravy 1 lb sage breakfast sausage (bulk) 4 Tbsp unsalted butter 4 Tbsp all-purpose flour 3 cups milk 2 tsp fresh ground black pepper Optional garnish: fresh parsley, chopped Drop Biscuits 2 cups all-purpose flour ½ cup shredded Parmesan cheese 1 Tbsp baking powder 1 Tbsp granulated sugar ½ tsp kosher salt 1 cup whole milk Preheat oven to 450°F. In a large (10”) oven safe skillet over medium high heat, cook sausage until lightly browned. Use a slotted spoon remove sausage from skillet and place in a bowl. Meanwhile; prepare biscuit mixture. In a large bowl combine flour cheese, baking powder, sugar and salt. Mix with a fork until combined. Add milk and stir with a fork, until mixture comes together. Set aside.
