Food Food Food ~ Cauliflower

Selection Buy one large head (about 3 pounds) for 4 to 6 servings. The flowerets should be white of cream white, and they should have a fresh green jacket of outer leaves. The head should be clean, heavy, and compact. Preparation Wash well. Remove the green stalks. Leave the head whole or separate into flowerets. Cooking Cook, covered in 1 inch of boiling salted water only until tender when tested with a fork. Flowerets will require no more than 8 to 15 minutes; a whole head of cauliflower will require 20 to 30 minutes. Serving Serve hot with butter or margarine or serve with cheese sauce, almond butter, or Hollandaise sauce. To serve raw cauliflower Break into flowerets and serve on a relish plate. Use as an appetizer with a dunking sauce. Add to vegetable salads. I actually found recipes for mac & cheese with hot dogs.  This isn't so unusual to me.  I always threw some frozen peas or mixed veg in when the macaroni was cooking and then threw in the chopped up hot dogs a few minutes before the macaroni was done.  I guess I should check out some of the "fancy" recipes online . . . LOL.  So there are also a pile of recipes online for mac & cheese ON hot dogs.  Seriously?  You need a recipe?  It's on the back of the box. And then I found mac & cheese grilled cheese.  That's a lot of carbs!  And yes their are recipes online for many many many variations.  LOL. How is it that we can put two ingredients many people dislike or down-right refuse to even try into cream cheese and those same people will clean the plate? Spinach Artichoke Dip This dip is deliciously rich and creamy, perfectly cheesy, brimming with spinach and artichokes and it's always a crowd favorite! This version is so easy to make. It's oven baked and served warm and melty. Who doesn't love lasagna? Deer meat is often referred to as venison. Venison originally meant the meat of a game animal but now refers primarily to the meat of elk or deer. Venison can be used to refer to any part of the animal, so long as it can be consumed, including the internal organs (Wikipedia) The last time I had venison was at my favourite restaurant which has since closed, the victim of a pandemic and a crooked landlord,  It was a juicy venison burger with our homemade bacon onion jam, smoked Gouda, lettuce, tomato and Santa's secret sauce.  It was amazing! I understand venison can be a bit tricky to cook properly so I prefer to leave that to the experts.

I have a love hate relationship with cucumbers.  I'm not crazy about them.  I like them in tzatziki, as pickles, in sushi, and in veggie sandwiches.  But that's about it.  I will eat them to be polite.  But in my house I don't eat cucumbers. So, as you can imagine, I have no cucumber recipes.  Please share your recipes.

I love chili . . . vegetarian, beef, beans, no beans, chicken . . . the hearty flavour of this dish just makes me happy.  I generally serve chilis with sour cream, rice, corn bread, and shredded cheese. According to Wikipedia, Chili con carne, meaning "chili with meat", is a spicy stew containing chili peppers, meat, and often tomatoes and beans. Other seasonings may include garlic, onions, and cumin.  Who doesn't love a delicious briny salty crunchy pickle?  You may have heard me mention that my husband is a VERY fussy eater . . . sigh.  Quiche was on his no try list until the day I made a couple for a brunch and he found out it was just fancy scrambled eggs . . . cue more sighing. I love quiche because they are so versatile.  You can add basically whatever you have in the fridge, bake it, and enjoy. Corn on the Cob . . . I know its not good for me but I love it so . . . Selection Allow 1 or 2 ears per person.  Cobs should be well filled with plump, milky kernels.  The husks should be fresh and green. Preparation Just before serving, remove husks and silk. Cooking Cook, covered, in unsalted boiling water until tender. Serve Lift corn from water and serve at once with salt, pepper, and plenty of butter or margarine.

I always have trouble remember the difference between rutabagas vs turnips . . . and sweet potatoes vs yams. So here is what I learned from Healthline : Sweet potatoes are a starchy root vegetable originating in Central or South America. There are two main varieties. They have a long shelf life and are usually sweeter and moister than regular potatoes. True yams are an edible tuber originating in Africa and Asia. There are over 600 varieties, which vary widely in size. They are starchier and drier than sweet potatoes and rarely found in local grocery stores. Why do I get so confused between these two tubers? Confusion between sweet potatoes and yams arose when US producers began using the African term “nyami,” which translates to “yam,” to distinguish between different varieties of sweet potatoes.
