Spinach with Raisins

Ingredients
220 g spinach 8 cups
2 tsp butter, unsalted 9 g
2 tsp pine nuts [optional] 5 g
1/2 tbsp raisins 5 g
1 pinch salt [optional] 0.2 g

Method

Prepare the spinach: Wash and drain rapidly then transfer to a pot or saucepan without adding any water. The water trapped in the leaves after gentle shaking is enough to cook them. Add salt, cover and cook over high heat 3-4 min until the leaves wilt and turn very deep green. Avoid overcooking otherwise the spinach will become brownish. Drain well.

Heat the butter in a pan over low heat. Add the cooked spinach, raisins and pine nuts (optional). Heat 2-3 min with stirring.

Serve.
