'Boxing in Guelph

Hal needed to go to Mississauga to take care of some paperwork for his new job.  I felt this was a good excuse for letterboxing.  As soon as our business was complete we headed for Guelph.

Our first stop was to collect Gee Bee Z . Gotta love the Kirbert stamp!

Next stop was Jaycees Bicentennial Park Series.  We found On The Run easily once we realized we weren't parked where the clues started.  It was an easy adjustment to figure out the starting point and work our way to the first stamps.  Unfortunately On The Run needed serious first aid.  There was no box or log book, only a chewed up bag with the 2 stamps inside.  We stamped out and put the stamps in a new bag.  Unfortunately we hadn't brought any repair supplies with us.  Off we went to find Coffee Time but it was very clearly missing.  The tree it was supposed to be in was pretty dead with only a few dried up needles left on it.  We checked around the area in case someone had hidden it in a new location nearby, but no luck.  When we notified the owners, they decided to archive the boxes.  I'm sad about that because it is a very nice park and the 2 stamps I did get were hilarious and quite well done.

We ended our trip after this because the rain started.  Don't worry, we'll be back.

Peach Pancake Syrup

15 cups peaches
6 cups sugar
6 tbsp lemon juice
3 tsp vanilla, coconut or brandy extract

Peel and cut the peaches and place them into a food processor to puree in batches.  In a large stockpot, combine the puree, sugar and lemon juice.  Bring the mixture to a boil and then simmer for 5 minutes more.  Add the flavouring of your choice.  Fill sterilized pint jars and then process for 20 minutes in a water bath.  Makes 8 pints.

Had pancakes with Peach Syrup for breakfast this morning.  Mmmmmmmmmmmmmmmmmmm!!!!!!!

Pam's Newly-invented Spaghetti Sauce

1/4 cup olive oil
2 cups chopped onion
3/4 cup chopped carrot
3 chopped garlic
4 cups chopped tomatoes (I used grape tomatoes)

Put all these ingredients in a crock pot and cook on high for 4 hours.  Near the end of cooking time add:

1/4 cup chopped fresh basil
1 jar Original Ragu sauce

I think all the ladies at Ladies' Day Out enjoyed this sauce on penne with Parmesan.  I know Hal and I did.

"Green Glop"

I'm sure this dish has a more sophisticated name, but in our family it is referred to as "Green Glop" or "Body Filler".  Despite the silly names we've given it, this salad/dessert/whatever is delicious and a Must Have at family gatherings.

1 large Cool Whip
1 instant pistachio pudding mix
1 19 oz. crushed pineapple
2 cups mini marshmallows

Mix together and chill before serving.

Is there any food better than picnic food?

The funniest family at the family reunion.  The theme at our reunion was "Our Family Tree is Full of Nuts".  And the prize went to this branch of the Hewson family -- a huge Christmas nutcracker.
